Happy National Homemade Cookies Day! Here’s the recipe from my current favorite 👇
Inspired by the ever popular Levain chocolate chip cookies 🍪

Healthy Chocolate Chip Pumpkin Cookies

Ingredients
2 eggs
3 tablespoons coconut oil
3 tablespoons pumpkin purée
3 tbsp @lakanto maple syrup
1 tablespoon vanilla extract
1/4 teaspoon nutmeg
1/2 cup @zintnutrition xylitol
1 cup almond flour
1 cup oat flour
1 Tablespoon arrowroot starch
1 tsp baking soda
pinch salt
chocolate chippies – the more the merrier. I used @lilys_sweets 😉

Directions for these gluten-free goodies!


Preheat your oven to 350°F and line a cookie sheet with parchment paper.

Mix together or cream the eggs, coconut oil, maple syrup, and vanilla extract. Mix until smooth.
Add in the xylitol (or sugar) and keep on mixing. Stir I. Dry ingredients and follow with the chippies.

Scoop dough into cookie shapes on baking sheet. I made 9 large-ish cookies – You can make them smaller or larger. Bake for 15-22 minutes (depending on the size) until the edges of the cookies are golden brown.

Let the cookies cool before devouring or they will crumble… still good of course 😘
