Simple Vegan Vanilla Cake

Not unhappy with how this “Space Cake” turned out 🪐 hopefully the birthday boy digs it… if not, I’m happy to eat the whole thing 🥳 recipe below if you need a delicious, and simple cake recipe 👇

Simple Vegan Vanilla Cake Ingredients

  • 2 cups almond flour
  • 2 cups spelt flour mix
  • 1 1/2 cups @zintnutrition xylitol
  • 2 tablespoons baking powder
  • 1/2 teaspoon pink Himalayan salt
  • 2 cups almond milk
  • 2 teaspoons apple cider vinegar
  • 2 tablespoons vanilla extract

Instructions for this healthy cake:


Preheat to 350F and lightly grease 2 8-inch round pans with coconut oil.
In a large bowl, stir the almond and spelt flour, sugar, baking powder and salt together. Next add the almond milk, vinegar and vanilla. Stir till combined. Pour evenly into the prepared pans.

Bake for 30 minutes. let the cakes cool before frosting.

In between the cakes I smeared a compote of berries and stevia that I’d cooked together. The frosting is a purée of 3/4cup cashews, 1/4 cup shredded unsweetened coconut shreds, 1/4 cup water 💦 tablespoon of lemon and stevia. I used activated charcoal and blue spirulina for the color!

So yes, the cake is pretty darn healthy too! 🧑🏼‍🚀✨
