This is the best chocolate chip cookie cake!
I was talking about the cookie cakes this week with friends. You know, the ones you got when you were a little kid from the mall on your birthday They were so good, right? Well since it was not his birthday, I made one for a certain someone for Father’s Day. Really, I should have put #2, because my dad is number one, but I kept it simple.
If you want to try this unbelievable chocolate chip cookie cake (which you should) here is the recipe
Chocolate Chip Cookie Cake
1/4 cup applesauce
1 egg + 1 yolk
2/3 cup Lakanto brown sugar
1/3 cup xylitol
1 2/3 cup spelt flour
1 teaspoon baking soda
1/4 teaspoon salt 🧂
1/2 cup stevia sweetened chocolate chips
Preheat the oven to 350°F, and lightly grease a 9-inch springform pan. Cream together butter or coconut oil, applesauce, and sugars. Then add egg and yolk and vanilla extract. Now sift in dry ingredients and finally add chocolate chips.
Spread batter in the greased cake pan and bake for 24ish minutes. Let cool when done. This is a must!! If the cake doesn’t cool and chill in the fridge, you won’t get the nice dense mall-like cookie cake texture you remember…. instead it’s fluffy and not nearly as good. Chill the cake! 🍪
