
Congratulations, you’ve made it through the year! A year of ups and downs lead many of us to consider how we can improve our health in the New Year, have you thought of your resolutions yet?
Whether your goal is to eat better, exercise more or lose weight, just remember to be SMART about the goals you set. Here are a few tips to help you do that! 1. SPECIFIC. Make sure your goal is specific. If you want to eat better, make it a goal to cook at home most nights of the week. 2. MEASUREABLE.Make your goal measurable. You want to run faster? Begin to time your runs and begin to improve upon your time with each run. 3. ATTAINABLE. By keeping your goal attainable, you have the opportunity to succeed! Instead of deciding to give up alcohol, maybe you choose to have just one glass of wine in the evening or select a day, or more, that you will abstain from drinking. 4. RELEVANT.Your goal has to be meaningful to you! If it’s a goal you’re not passionate about or a goal you’ve set based on someone else’s opinion, then you’re not likely to follow through. 5. TIME BASED. How long will it take you to reach your goal? If you decide you want to exercise more, then try to workout 3 or 4 times a week and try it for three months. After you complete that goal, see how you feel. Feeling good? Great! Set another goal, maybe add another two months or an extra day each week and get it done!

Here’s a deliciously healthy recipe to inspire you in your 2017 journey to better health!

Cacao Brownies with a Blueberry Frosting
Ingredients
Dry
- 2/3 cup coconut flour
- 1/4 cup tigernut flour (substitute almond flour or sorghum flour)
- 1/4 cup cacao powder
- 2 Tablespoons flaxmeal
- 1 Tablespoon Cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
Wet
- 1 plantain
- 1/4 cup coconut oil
- 1/3 cup applesauce
- 1/2 cup coconut water (non dairy milk works, too!)
- 2 Tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice

Directions
Preheat the oven to 350°F and lightly grease an 8×8 pan.
Using a blender, puree your liquid ingredients. In a separate mixing bowl, sift together all of your dry ingredients. Now mix your liquid ingredients into the dry.
This may get messy… you may need to use your hands to work the dough! You want everything to be well combined, but this batter looks and feels a lot like cookie dough.
Spread (or press) the batter into your pan. (*optional- give the top of the batter a spritz of coconut oil and sprinkle more cinnamon on top!). Bake for about 24-28 minutes.
Let the pan cool before frosting and slicing into this goodness!

Blueberry Cream Frosting
Ingredients
- 1/3c soaked hazelnuts
- 1/3c soaked cashews
- 1/2c blueberries
- 1/4c coconut butter
- 1/2c nondairy milk or coconut water
- 1t vanilla extract
- *optional: sweeten with stevia or maple syrup
Directions
Put all of your ingredients in a blender or food processor and blend until creamy! Add additional water or non-dairy milk as needed.
