Who doesn’t love pancakes for brunch?

Pancakes on Sunday are tradition in my family. Truth be told, Sunday is my favorite day of the week, a day of rest. An little exercise, church, family time, pancake brunch complete with mimosas, of course. My family enjoys when I come up with different pancake recipes like pumpkin, or these Cinnamon Walnut and my mom’s favorite, Orange Poppyseed. What can I say? We like our Sunday morning pancakes.

One of the family favorite’s are these deliciously healthy Banana Pancakes. Not only are they oh-so-tasty but they’re super simple to make! Gluten free, vegan and made with only a few simple ingredients, you might try whipping up a batch yourself this Sunday…I dare you not to sing a little Jack Johnson while making these.

Banana Pancakes

Flourless, gluten free, vegan

Makes about 10 small pancakes

Ingredients

  • 1 1/3 cup unsweetened almond milk
  • one teaspoon of lemon juice
  • 1 cup gluten free rolled oats
  • 1 ripe banana
  • one teaspoon coconut oil*
  • 1 Tablespoon Cinnamon
  • 1/4 teaspoon nutmeg
  • pinch of pink himalayan sea salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

*Feel free to omit.

Directions

In the order listed, begin to put all of your ingredients in a blender, then blend away! Allow the batter to sit a minute or two to thicken. If it’s too thick, pour in a little more coconut (or non dairy) milk. If the batter seems too thin, add a few more oats, blend, and again, let sit a moment.

Lightly grease a large frying pan with a little coconut oil. Set the stovetop to medium-low heat.  Now when the pan is hot, begin to pour your batter and cook your pancakes a minute or two (you’ll see bubbles start to come up).  Flip your pancakes and let them cook roughly two minutes. They should be a nice golden color.

Try topping these stack of goodness with real maple syrup (none of that artificial stuff!). These pancakes are ahhhmazing with a slather of peanut butter, fresh berries and a dollop of applesauce too. Yum!
