Santa Lucia Buns and that Hygge Feeling

Does anyone else have an American Doll? 🙋‍♀️Well I did, or rather, I still do. I have a Kirsten doll – I assume my parents chose her because she has equally big, puffy blonde hair like me 🤦‍♀️ Kirsten came to mind the other night when I had this overwhelming need for some hygge.

Hygge (pronounced hue-guh not hoo-gah) is a Danish word that encompasses a feeling of cozy contentment 🥰 So I wanted all things cozy and warm and thought of cold winter days in Washington when my mom would bake Santa Lucia buns (more of a Swedish thing but warm and delicious). My mom would use a recipe from Kirsten’s cookbook 📖That’s right, that doll had more accessories than I do but dang I loved that cookbook!

So in my need for hygge, I baked Santa Lucia buns and they are delightful. AND all the more wonderful because my very good friend Tom sent me a jar of his home made Santa Rosa plum jam 💛

Santa Lucia Buns

Ingredients

  • 1/3 cup milk 🥛
  • 1/4 cup butter 🧈
  • 1/4 cup Luke warm water
  • 1 packet dry yeast
  • 2 tbsp sugar (recipe used 1/4 but I cut it)
  • 1/2 salt 🧂
  • 1/4 saffron (didn’t have it, so I left it out. But I did add 1Tb cinnamon)
  • 2 3/4 flour (I’m über sensitive to wheat so I used ancient grain spelt)
  • 1Tb coconut oil
  • 1 egg 🍳(plus 1 to brush the dough before baking)
  • 24 raisins (my mom loathes raisins 😖 so I used dried cherries 🍒 )

Directions

Proof your yeast and let sit 10 minutes. Warm the milk 🥛 and butter 🧈 together and then add to yeast. Stir in egg 🥚 , salt and *saffron. Then add 1 1/2 cups flour and stir till smooth.

Add enough remaining flour to shape a ball (save some flour to knead the dough). Now, knead your dough for about 10 minutes. Then cover the dough with a towel and let it rest in a greased mixing bowl 🥣 for 45 minutes.

Punch the dough and divide it into 12 sections and roll each into 8” ropes. Cross 2 in the middle and coil each end into tight circles. Do this till you have 6 buns. Cover with a towel and let rest for 45 mins on a greased baking sheet. Then brush each bun with egg yolk and place “raisins” in the center of r of each coil. Bake 15-20 minutes until golden brown.
