The Best Healthy Brownies

The best healthy brownies go hand and hand with new healthy living goals.

After a long hot, sweaty 🥵 walk in the Florida sun ☀️ I am loving cold showers! I recognize that this is not a mind-blowing thing, but I don’t recall purposefully taking cold showers, let alone enjoying them. I only took cold showers if I was camping 🏕 and it was usually because the campground facilities ran out of warm water 😑… but now, low and behold, they are so dang refreshing.

They might become a more frequent addition to my routine. Along with the new fun and healthy addition, I’ve also set a new, fun and healthy goal for myself. Any goal setters out there? I’m actually not one for setting goals. I’m more a fan of deciding what it is I want to do… and then doing it 🤷‍♀️ To quote NIKE , “Just do it.”

But this is different, this is personal and something I’ve more or less accepted than ever tried to change. For the last decade or more, I’ve struggled with Hypothalamic amenorrhea (that’s a mouthful). After battling a virus in 2006, I lost nearly a third of my body weight in a very short amount of time. With the weight also went my cycle. In the last several years I’ve managed to put on 15 lbs – I looked like a skeleton when I was at my worst – but still my weight is low, and I’m a very active person and I never got my flow back.

Why didn’t I just see a doctor you ask? Well, I actually saw several doctors. And these half a dozen doctors dismissed the issue because, “it’s common for someone with low weight,” “it’s common among athletes,” or better yet, “we’ll take a closer look when you want to have children.” What’s worse than their dismissive answers was my willingness to accept it.

Not any more. I’ve made it a goal to try and get it back. This goal is scary because it means I will most likely have to change a lot about my lifestyle but knowing what I want for my future self is more important. But one thing is for damn sure not going to change, I’m going to eat deliciously healthy treats every day!

And to get me started on the “journey” why not some über FUDGEY, chocolatey brownies!

The Besty Healthy Fudge Brownies

Ingredients

  • 1 1/2 cup oat flour
  • 1/4 cup Vega Protein and Greens (sub almond flour)
  • !/2 cup cacao powder
  • 1 tsp baking powder
  • 2 Tb sunflower seed butter
  • 2 TB greek yogurt
  • 1 tsp vanilla extract
  • pinch of salt
  • 3/4 cup strong brewed coffee (my favorite is Golden Hills!)
  • 2 Puréed bananas 🍌 or 1/2 cup applesauce

*optional – 1/3 cup chocolate chips!

Instructions

Preheat oven to 350F. Whisk all dry ingredients together until no lumps remain. Then stir in the wet. You can add an extra 1/4 cup milk if your mixture is too dry. It’ll be sticky, sort of brownie batter consistency (go figure). Spread in a greased 8×8 pan. Bake for 20 min or until set. Remove & let cool.
