Simple Healthy Pancakes

I eat pancakes almost every day. But I also work and try to stay fit. So these super simple pancakes are my go-to!

Ingredients:

  • 1/2 cup rolled oats
  • 1/2 banana
  • 1 egg; plus 1 egg white (use a whole banana instead of eggs for a vegan option)
  • 1/2 teaspoon baking soda
  • teaspoon vanilla extract (optional)
  • pinch of salt
    • finally, add whatever spices and additions you’s like – cinnamon and nutmeg, and blueberries for me

Directions:

Eat a griddle or fry pan to medium heat. Meanwhile, blend your ingredients together until smooth. [They can be a little gritty if you like a little bite].

Pour batter onto pan. Let the pancakes cook for about two to three minutes before flipping. Flip and continue cooking on the other side another two minutes or so.

Finally, eat. I like my pancakes topped with yogurt (sometimes cottage cheese), peanut butter and berries.
