
I don’t know of a better combination than Peanut Butter and Chocolate, so these Peanut Butter Breakfast Brownies are amazing… especially for breakfast! ☕️
Brownies are my absolute favorite dessert, though I can’t help but cringe when I see the ingredients listed in traditional brownies… corn syrup, bleached flours, and sugar on top of sugar, on top of sugar 😝 Not exactly the breakfast of champions. And yes, I like to eat brownies, doughnuts and other baked goods for breakfast, but always with a deliciously health twist.

Tasty Peanut Butter Breakfast Brownies
Ingredients
- 1 cup Birch Bender pancake and waffle mix
- 1/2 cup oat flour
- 1/2 cup cacao powder
- 1/2 cup applesauce
- 1/4 cup Organic peanut butter (made from Valencia peanuts)
- 1/2 cup gluten free rolled oats
- 1/3 cup chocolate chips
- 1 diced banana
- pinch of pink himalayan sea salt
- optional – sweetner of choice; I used a dash of NuNaturals Monk Fruit
Directions
Preheat the oven to 350°F and lightly grease an 8×8 baking tray with
coconut oil.
Grab a large mixing bowl and stir together oat flour, cacao and Birch Bender waffle mix. Stir in applesauce, and peanut butter, followed by rolled oats, chocolate chippies and diced banana. Spread the batter into your prepared pan and bake 25ish minutes.
Let cool before frosting. I frosted these beauties with a slurry of peanut flour, cinnamon, coconut milk and a touch of stevia.
