
Celebrate Mother’s Day with these gluten free orange poppyseed pancakes. These pancakes are delicious and healthy (which mom will appreciate). They’re also quick and simple to make (which you will appreciate).
Sunday is my favorite day of the week. A day of rest. My mom comes to visit, we go to church and then, we brunch! We enjoy girl talk over our Orange Poppyseed Pancakes 🥞 and mimosas… though, we reserve the orange for our pancakes because we’re champagne purists! 🥂

I love making these pancakes every Sunday for my mom but more than that, I love the time we have together. If you are able to, take the time to celebrate with your mom (or whoever that mom-figure is in your life) this Sunday and maybe enjoy some of these Orange Poppyseed Pancakes too.

Orange Poppyseed Pancakes

Servings: I could eat the whole thing without shame but usually split it in two or three servings
Ingredients
- 1 ripe banana
- 1 cup non dairy milk
- 1 1/3 cup rolled oats
- 1 slice of orange (or 2Tb orange juice plus zest)
- 1/2 teaspoon baking soda
- pinch of salt
*1/4 cup poppyseeds
Instructions
Add ingredients in the order listed into your blender (do not add poppyseeds yet). Puree until smooth. Add remaining poppyseeds and stir to combine.
Warm a griddle to medium heat and give it a spritz with coconut oil. When the pan or griddle has warmed, pour your batter on making whatever sized pancakes you’d like! After about 2-3 minutes, flip and cook the remaining side until golden brown.
Plate and serve up this delicious goodness!
