CHOCOLATE CAN BE A GREAT TREAT AND A DECADENT DESSERT BUT I THINK IT MAKES A DELICIOUS ADDITION TO BREAKFAST TOO.

Serotonin, you might already know, is an anti-depressenant hormone that calms us and makes us feel good. Along with serotonin, phenylethylamine also helps to boost our moods. And those endorphins? Well, they help you to feel empowered and energized and we often associate them with exercise, but cacao can give them a boost as well!
START THE MORNING ENERGIZED WITH THESE RICH CHOCOLATE RASPBERRY WAFFLES

Grain Free Chocolate Peppermint Muffins…
INGREDIENTS

1 ripe plantain
-
1/4 cup almond butter
-
1/3 cup real cacao powder
-
1/3 cup almond flour
-
1 Tablespoon espresso powder (optional)
-
1 Tbsp baking powder
-
pinch of pink Himalayan salt
-
1 teaspoon peppermint extract
-
*optional – pinch of monk fruit or stevia for extra sweetness

DIRECTIONS
Preheat the oven to 350°F and liberally grease a doughnut pan with coconut oil.
Puree plantain in a blender. [note – it helps to add 2 or 3 tablespoons strong brewed coffee or non-dairy milk to the blender to puree more easily]. In a separate mixing bowl, combine puree and almond butter and then slowly sift in remaining ingredients until well combined.
Scoop batter into mini muffin pan and bake 7-10 minutes.
Remove from the oven and let that deliciousness cool before scarfing them down.
