Pumpkin Pie

Ingredients

  • 1 pre-made crust

  • 1 1/4cup coconut milk

  • 1 cup cashews

  • 1 cup pumpkin puree

  • 1/3 cup maple syrup

  • 1 Tablespoon agar agar

  • 1 Tablespoon pumpkin spice

  • 1/8 teaspoon pink Himalayan salt

Directions

Preheat the oven to 330°F. Using a high powered blender puree all of your ingredients until smooth. Pour contents of blender into the prepared pie crust and bake for 1 hour.

Allow pie to cool 20-30 minutes before slicing in. Keep stored in the refridgerator for up to one week. And no worries, the pie freezes well too!
