Honey is possibly one of the earth’s most pure foods. Most people know honey to be a typical sweetener you drizzle on your favorite breakfast cereal but honey is much more.

Honey itself is a functional food, which is sort of a fancy way of saying that honey contains a whole host of nutritional benefits.

Raw honey contains minerals including zinc, iron, calcium, potassium, phosphorous, selenium and magnesium. As far as vitamins are concerned, vitamin B6, thiamin, riboflavin, pantothenic acid (B5) and niacin (B3) can all be found in raw honey. In addition, the nutraceuticals contained in honey help reduce the amount of damaging free radicals.

I know what you might be thinking, “won’t this hinder my weight-loss goals?”

Raw honey does not cause a sugar spike and elevated insulin release like white sugar. In fact, Natural honey contains several enzymes which enhance the digestion of food substances especially typical carbohydrates like sugars and starch. 

These benefits and more can be found in raw honey, not to be confused with the overly processed varieties. I’m a big fan of Honey Feast used in the recipe below. Peanut Butter Bourbon Honey Cookies


  • 1/2 cup drippy peanut butter

  • 1/3 cup Bourbon Honey

  • 1 Tablespoon cinnamon

  • pinch of pink himalayan salt

  • 1 cup almond flour

  • 1 cup gluten free rolled oats

  • *optional – 1/3 cup chopped unsweetened chocolate (I like this brand)

  • *optional – 1/4 cup chopped peanuts

*If it’s looking too dry, add a tablespoon or two of non-dairy milk

Preheat the oven to 350°F and line a cookie tray with parchment paper.

In a large mixing bowl, stir together ingredients in the order listed above. The batter with be thick and a bit sticky. Scoop dough (about the size of a golf ball, but not round, so give them a smush) onto the parchment paper. Bake for 10-12 minutes. The cookies will continue to bake and firm up once out of the oven.
