My birthday came and passed and I am still dreaming of this Peanut Butter Charcoal Cake.
Like all of my delicious desserts, this cake is infused with all sorts of goodness. The star of this dessert is the activated charcoal. Activated charcoal is totally edible, not very flavorful and has many health benefits. Best known for its detoxification properties, activated charcoal is a potent natural treatment used to trap toxins and chemicals in the body, allowing them to be flushed out so the body doesn’t reabsorb them.
Activated charcoal is also helpful for digestions, gas, bloating, heart health and anti-aging!
Activated charcoal works through a process called “adsorption”. Adsorption is a chemical reaction where elements attach themselves to a surface. Through Adsorption, activated charcoal is able to bind to certain poisons, heavy metals and other toxins to its surface to help pull them out of your body.

Along with activated charcoal, this beautiful cake is both grain free and vegan thanks to protein rich hemp flour and sugar free thanks to the power of the plantain.
Chocolate Peanut Butter Charcoal Cake
1 very ripe plantain
1/4 cup peanut flour*
1/2 cup coffee
1/4 cup hemp flour
1/4 cup cacao powder
1 tablespoon cinnamon
2 teaspoons activated charcoal
1 tablespoon baking powder
pinch of pink Himalayan salt
*optional – sweetener of choice (stevia, monk fruit, xylitol, etc)
*You can use a 1/4 cup of your favorite nut butter instead, just reduce coffee by 1/4 cup.
Preheat the oven to 350°F and grease three 4″ cake pans* with coconut oil.
Stir together dry ingredients in a mixing bowl; set aside. Blend together plantain and coffee and pour contents of puree into dry ingredients. Stir until smooth.
Spoon batter into prepared baking pans and bake for 10-12 minutes. When cooled, frost your cakes (you can stack them too!).
*This recipe also works in a doughnut pan too!
