  • 2 1/2 cups almond flour
  • 2/3 cup xylitol
  • 1 cup + 3 tablespoons aquafaba
  • 1/4 teaspoon cream of tarter
  • Juice of one half lemon; plus the zest of the whole lemon!
  • pinch of pink himalayan salt
  • 1 Tablespoon baking powder


Preheat the oven to 325°F and line a large baking tray with parchment paper.

Using an electric mixer, beat aquafaba and cream of tarter until stiff peaks form.

Slowly begin to incorporate remaining ingredients until well combined.

Using a cookie scoop or spoon, scoop generous spoonfuls (about 2″) of batter onto the baking tray. [Feel free to poke at your cookies to make them more uniformed].

Bake the cookies for about 20 minutes, then drop then increase the temperature to 350°F for another 5-10 minutes. Take a peak in the oven to make sure cookies aren’t burning. They should have a golden color around the edges.

Remove cookies from oven and allow to cool. Now you can enjoy them as is, or slap a little frosting in the center and make cookie sandwiches! Whatever you do, enjoy!
