Blustery weather and hermit-like living had me reaching for comforting meals this weekend. I made a large pot of soup. Nothing makes a better addition to a delicious soup and a gloomy day than a delicious and hearty bread.

Even when Iโ€™m comforting myself with food, I still reach for a healthy option. This bread ๐Ÿž just happens to be gluten free, grain free and delicious. I have to say, almond flour does an unbelievable job of turning itself into bread (not to mention cakes ๐ŸŽ‚ and brownies too ๐Ÿคค ). Whatโ€™s not to love about almonds? They are a rich source of protein ๐Ÿ’ช and vitamin E – Vitamin E just happens to support the health of your lungs, eyes ๐Ÿ‘€ and skin!

When it comes to the health of our skin, avocado oil is a win. Vitamins A and D present in avocado oil ๐Ÿฅ‘ help to fight wrinkles by boosting collagen production.

As if this recipe werenโ€™t already pumped full of healthy goodness, one egg ๐Ÿฅš delivers with it 6 grams of protein plus selenium, an assortment of B vitamins, zinc and vitamin D โ˜€๏ธ๐Ÿณ (one of the few digestive forms of this vital nutrient).

So find comfort in this delicious and oh-so-healthy bread. I hope it finds its way to your dinner table soon!

Preheat the oven to 340ยฐF and lay a piece of parchment on a baking sheet.

Sift together your dry ingredients in a large bowl. In the center of the dry ingredients crack in your one egg, followed by one tablespoon of avocado oil and finally the apple cider vinegar. Fold together your ingredients to form a ball.

Donโ€™t be afraid to get your hands dirty, continue to form dough into a ball and set on the parchment. Press down to form a 1/2-1 inch mound and gently score the top.

This recipe yields about five slices; double the recipe depending on your needs!
