An Oh-So-Simple Bundt Cake
INGREDIENTS

2.5 Cups almond flour
-
1/2 cup xylitol or erythritol*
-
5 eggs
-
1 Tablespoon baking powder
-
pinch of pink himalayan salt
VARIATIONS:
This recipe is practically fool proof so test any variations you’d like 😉

Stir in your favorite spices – cinnamon, nutmeg, cardamom, etc

Add Chocolate Chips

Juice and zest of half a lemon 🍋 (or orange)

mix in your favorite fresh or frozen berries

add 1/3 cup poppyseeds

Sub 1.5 cups of almond flour for hazelnut flour!
* Use any sugar you would like but to keep it sugar free, I recommend xylitol or erythritol. I’ve also successfully used 1/4 cup fruit puree and a tablespoon or two of honey/maple syrup

DIRECTIONS
Preheat the oven to 330°F. Generously grease a bundt pan with coconut oil.
In a large mixing bowl stir together dry ingredients. Stir in eggs.

Variation – Cinnamon and Cranberry for a Festive Treat
Fold dough into the bundt pan. Bake for 40 minutes but keep an eye on it; ovens vary!
