I’m still till drooling 🤤 over these wild blueberry and peanut butter 🥜 blondies.
They are (well, were) absolutely ahhhmazing 🤩 and grain free 🌾 vegan 🌱 sugar free 🍬 and damn delicious too! With oodles of protein from the peanut 🥜 buttery goodness. And then there were the blueberries… a LOT of blueberries 💙

Peanut Butter and Blueberry Blondies

Ingredients

2 large ripe plantains

3/4 cup peanut butter
-
2 tablespoons applesauce
-
2 tablespoons coconut oil (melted)
-
1/2 teaspoon baking powder
-
1/2 teaspoon baking soda
-
pinch of pink himalayan salt
-
*optional – 1T cinnamon, 1/2t nutmeg
-
3/4 cup organic blueberries

Directions
Preheat the oven to 350°F and line a 8×8″ baking pan with parchment paper.
Using a blender, puree the plantains, coconut oil and applesauce. Add baking soda, powder and salt and blend to combine. Grab a mixing bowl and put in your peanut butter. Stir the contents of the blender into the mixing bowl and mix well. Finally stir in blueberries.
Pour batter into the prepared baking pan and bake 25-30 minutes. Allow to cool before slicing… or don’t, your call!
