Savory Spinach and Artichoke Quiche

I may be a doughnuts and pancakes for breakfast kind of gal, but this Savory Quiche is calling my name…

Quiche for breakfast, but not just any quiche, a Spinach, Onion, mushroom  and Artichoke Quiche… because I love my veggies! Usually I make a quiche with sprouted, organic tofu but decided to mix-it-up with Agar Agar! Because why not? Right? 

Agar agar (and no, I didn’t stutter), is a sort of gel made from red algae. You can find it as a powder, flakes and even bar form. It’s a great way to thicken soups, desserts and this delicious quiche vegan style!

Aside from the fact that agar agar is a fantastic vegan substitute in the culinary world  agar agar is also packed with health benefits too! It’s high in fiber and low in calories and it’s a great source of manganese, magnesium, folate and iron  Agar agar is also helpful with digestion, weight loss and keeping your blood sugar under control. Spinach and Artichoke Quiche

Ingredients

  • 1/2 cup yellow onion, diced

  • 1 cup sliced mushrooms

  • 1 cup water

  • 1 cup vegetable broth

  • 1 cup cashews

  • 1 Tablespoon agar powder (triple for flaked agar)

  • 1 Tablespoon nutritional yeast

  • 1 Teaspoons pink himalayan salt

  • 1 Tablespoon Lemon juice

  • White pepper to taste

  • 1 – 10oz jar artichoke hearts (quartered)

  • Pie Crust

Directions

In a skillet heated to medium, sauté onion for 5 minutes. Add Mushrooms and saute` an additional 5 minutes. Add spinach and continue until wilted. Remove from heat.

Using a blender, combine remaining ingredients (except for artichokes) until smooth.

In a prepared crust, lay sauted mixture, followed by a handful of chopped artichokes. Pour contents of blender over crust.

Bake for 60 minutes at 325F. [At the 40 minute mark, feel free to add additional artichokes on top; return to oven].
