Chocolate Peanut Butter Protein Doughnuts

Ingredients

  • 1 very ripe plantain

  • 1/4 cup peanut flour*

  • 1/2 cup coffee

  • 1/4 cup hemp flour (almond flour works as a substitute)

  • 1/4 cup cacao powder

  • 1 tablespoon cinnamon

  • 2 teaspoons activated charcoal (optional)

  • 1 tablespoon baking powder

  • pinch of pink Himalayan salt

  • *optional – sweetener of choice (stevia, monk fruit, xylitol, etc)

*You can use a 1/4 cup of your favorite nut butter instead, just reduce coffee by 1/4 cup.

DIRECTIONS

Preheat the oven to 350°F and grease a doughnut pan with coconut oil.

Stir together dry ingredients in a mixing bowl; set aside. Blend together plantain and coffee and pour contents of puree into dry ingredients. Stir until smooth.

Spoon batter into prepared baking pan and bake for 10-12 minutes. When cooled, frost your doughnuts and enjoy!

Ingredients

  • 1/4 cup peanut flour

  • 1/4 cup coconut butter

  • 1/2 teaspoon turmeric (for color)

  • 1/2 teaspoon organic vanilla extract

  • 1/4 cup coconut milk (or more depending on preferred consistency)

  • 1/8 teaspoon uncut stevia or sweetener of choice.

Directions
