A Healthy Easter Recipe Roundup

Not going to lie, Easter is one of my favorite holidays. Jesus, good food and family, what’s not to love?

And speaking of food… here are some of my favorite recipes to make for Easter 🐣 I hope you enjoy them as much as I do!

  1. Grain Free Lemon Cookies

    Easter brings to mind bright colors and citrus and floral scents. I love these grain free lemon cookies because they have just the right amount of zest from real vitamin C-packed, lemon goodness.

2. Golden Lentil Bread

No need to adjust your screens, this Golden Lentil Bread is just a bright and golden as it looks. And did I mention delicious too? Try it at brunch smeared with mashed avocado and a little hot sauce!

The Easter Bunny isn’t the only one that should be loading up on carrots…

Carrots are one of the most popular veggies worldwide and can be eaten raw, cooked or juiced. Carrots get their signature orange color from antioxidants called carotenoids, which are known for protecting the eyes and skin. 

In addition to high levels of vitamin A, most of the benefits of carrots can be attributed to their beta-carotene and fiber content. This root vegetable is also a good source of antioxidant agents (lycopene, lutein and zeaxanthin). Furthermore, carrots are rich in vitamin C, D, E, K, and B8, as well as folate, potassium, iron, copper, calcium, magnesium and manganese.

Beets featured in this recipe are not only delicious, but they’re good for you, too! Beets are packed with immune-boosting vitamin C, digestion supporting fiber, and essential minerals like potassium and manganese. 

Looking to detox? Beets also help to cleanse your liver, kidneys and pancreas, working to reduce the “bad” cholesterol, and regulate your blood pressure. They combat anemia, fight fatigue, and build stronger bones… and did I mention Beets are an aphrodisiac, too?… oooh la la…

7. An egg-cellent option for vegan guests are these Mini Eggless Quiche!

A delicious combination of sprouted tofu and my Everything Sauce, makes for a deliciously healthy and egg free savory option.

8. This Broccoli Cheddar Soup has all sort of beautiful greens and golden colors of Spring.

Broccoli is essentially the poster veggie for healthy eating; anyone you ask certainly knows that broccoli is a health food. If you’re trying to reduce inflammation, then broccoli should be a go-to food. Broccoli boasts some pretty great qualities including potassium and magnesium. The antioxidants in broccoli alone are particularly potent anti-inflammatory substances.

9. This Blueberry Cheesecake happens to be one of my all time favorites, I hope you enjoy!

Your brain is well over 60% fat, so it only makes sense that we should nourish those fat stores, like with the healthy fats found in this dessert!
