Chocolate Amaretto Pie
1 cup organic cashews
1 cup coconut milk (or non-dairy milk)
1/4 cup maple syrup (or Honey!)
1/4 cup Amarretto (or your favorite liquor)
2 Tablespoons cacao powder
1 Tablespoon + 1 teaspoon agar powder
1/4 teaspoon pink himalayan salt; omit if you’ve used salted peanuts
optional – 1 teaspoon salt and/or pumpkin spice
Preheat the oven to 325°F. Set a prepared pie crust to the side.
Using a high powered blender, combine remaining ingredients and puree until smooth. Pour contents of blender into prepared pie crust and bake for 1 hour.
When finished, allow the pie to set before digging in. For a firmer pie, bake for 70 minutes.
