Savory Spinach and Artichoke Quiche

I may be a doughnuts and pancakes for breakfast kind of gal, but this Savory Quiche is calling my name…

Quiche for breakfast, but not just any quiche, a Spinach, Onion, mushroom  and Artichoke Quiche... because I love my veggies! Usually I make a quiche with sprouted, organic tofu but decided to mix-it-up with Agar Agar! Because why not? Right?

Agar agar (and no, I didn't stutter), is a sort of gel made from red algae. You can find it as a powder, flakes and even bar form. It’s a great way to thicken soups, desserts and this delicious quiche vegan style!

Aside from the fact that agar agar is a fantastic vegan substitute in the culinary world  agar agar is also packed with health benefits too! It's high in fiber and low in calories and it's a great source of manganese, magnesium, folate and iron  Agar agar is also helpful with digestion, weight loss and keeping your blood sugar under control.
