Chocolate can be a great treat and a decadent dessert but I think it makes a delicious addition to breakfast too.
Chocolate doesn't have to be reserved just for desserts and special occasions. 100% cacao is actually a superfood! This superfood contains a number of essential minerals; such as potassium, copper and magnesium, flavonoids and several vitamins; including vitamin B1, B2, D, and E. Pure cacao (not to be confused with the milk chocolate, high sugar varieties) is rich in antioxidants, making it a heart healthy choice.
What some folks don't know is that cacao can have an affect on our mood-hormones too including phenylethylamine, serotonin, and endorphins.
Serotonin, you might already know, is an anti-depressenant hormone that calms us and makes us feel good. Along with serotonin, phenylethylamine also helps to boost our moods. And those endorphins? Well, they help you to feel empowered and energized and we often associate them with exercise, but cacao can give them a boost as well!
Start the morning energized with these Rich Chocolate Raspberry Waffles
Chocolate Raspberry Waffles
- 1/4 cup hemp flour
- 1/4 tigernut flour (substitute with almond or oat flour)
- 1/3 cup arrowroot starch (sub non-GMO corn starch)
- 1/4 cup raw cacao powder
- 1/4 cup plus 1 Tablespoon non-dairy milk of choice
- 1/4 cup strong brewed espresso or coffee
- 1/2 Tablespoon Baking powder
- 2 teaspoons powdered raspberries (cinnamon and nutmeg is delicious too!)
- stevia to sweeten; or, 1 Tbsp raw honey or maples syrup, (you can omit sweetener for a savory option)
Preheat your waffle iron (I successfully used a belgian waffle maker) and spritz with coconut oil.
Using a large mixing bowl, stir together your dry ingredients. Slowly begin to add remaining ingredients and stir until smooth. Your batter should be fairly thick.
Scoop 1/2 cup of the batter (eyeball it) onto your waffle iron. Cook approximately 4 minutes.
This recipe makes 2 large belgian waffles. 1 serving = 1/2 waffle. I tend to eat a whole waffle slathered with unsweet coconut yogurt, fresh berries and a sprinkle of this chocolate superfood powder... because I can never get enough chocolate!
