Chocolate and Amaretto combine for this ultra delicious, creamy dessert.
This Chocolate Amaretto Pie is loaded with goodness like real cacao powder and just a touch of sweetness.
WHILE ALMONDS AND WALNUTS TEND TO GET MOST OF THE ATTENTION, IF YOU ASK ME, CASHEWS DESERVE SOME GLORY, TOO.
With a rich, buttery flavor and an impressive list of health benefits, cashews are one of the unsung heroes of a healthy eating lifestyle. They’re packed with protein, healthful fats, and vitamins, minerals and antioxidants. These include vitamins E, K, and B6, along with minerals like copper, phosphorus, zinc, magnesium, iron, and selenium, all of which are important for maintaining optimal bodily function.
And I probably don’t have to tell you that in addition to being a powerhouse of nutrients, they’re delicious too and the main component of my Chocolate Amarretto Pie.
Chocolate Amaretto Pie
1 cup organic cashews
1 cup coconut milk (or non-dairy milk)
1/4 cup maple syrup (or Honey!)
1/4 cup Amarretto (or your favorite liquor)
2 Tablespoons cacao powder
1 Tablespoon + 1 teaspoon agar powder
1/4 teaspoon pink himalayan salt; omit if you’ve used salted peanuts
optional - 1 teaspoon salt and/or pumpkin spice
Preheat the oven to 325°F. Set a prepared pie crust to the side.
Using a high powered blender, combine remaining ingredients and puree until smooth. Pour contents of blender into prepared pie crust and bake for 1 hour.
When finished, allow the pie to set before digging in. For a firmer pie, bake for 70 minutes.
